Topel Winery Hidden Vineyards Cabernet Sauvignon

Each vintage gets better and better!!! Duncan Peak in Hopland in Mendocino County (north of Alexander Valley) has an elevation of 1,400 feet. Yowzers! With production topping out at just over 400 cases of Cabernet, Topel's handcrafted style results from hand harvesting; they sometimes pick a single vineyard 3-4 times over to ensure ripe, intense fruit. The wine underwent whole-berry fermentation and just like the 1998 which was aged in French oak barrels for two years before it was bottled -- unfined and unfiltered -- and aged in the bottle for an additional six months before release.
